This guide covers how to start a bakery business, from a home baking business that sells custom cakes to a small bakery shop with an oven, display counter and daily bread. Bakers sell cakes, cupcakes, cookies, breads, brownies, rusks, puffs and festive sweets to walk in buyers, party hosts, cafes and offices. Is a bakery business profitable?
Bakery items can carry a healthy margin over ingredient cost, especially custom cakes, but labour, wastage and rent decide what is left. What decides profit:
- Recipe costing: flour, butter, cream, chocolate, eggs or substitutes, boxes and gas or power, per piece.
- Waste: unsold fresh items lose value by evening. Bake to orders and to sales history.
- Product mix: custom cakes and gift boxes earn more per hour than plain bread.
- Location: a shop needs footfall; a home bakery needs strong word of mouth and online reach.
- Consistency: the same taste every time builds repeat orders.
Honest risks: rising butter and chocolate prices, long hours, slow weekdays, and food safety complaints. Keep clean, labelled storage and track expiry dates.
Example only, with assumptions: a 1 kg custom cake uses ₹450 of ingredients and ₹60 of box and board. Gas or power is ₹40. If you sell it for ₹1,200, about ₹650 is left to pay for your three hours, equipment and marketing.

How to start a bakery business, step by step
- Choose home or shop. Starting from home tests demand with low cost. A shop needs footfall and more money.
- Pick a focus. Custom cakes, eggless baking, breads or healthy bakes. A clear focus is easier to market.
- Perfect a small menu. Bake each item many times until the taste and look are the same every time.
- Cost every recipe. Weigh ingredients, add packing and gas or power, then price with a margin.
- Get your food licence. See the licence section below before you take paid orders.
- Set up a clean work area. Separate storage, labelled containers, hair covers and handwashing.
- Buy key equipment. A reliable oven and mixer first; add more as orders grow.
- Design packing and labels. Sturdy boxes, your name, ingredients and allergens, and a best before date.
- Photograph your bakes. Natural light, clean backgrounds and a cut slice view.
- Set an order process. Lead time for custom cakes, advance payment and pickup or delivery slots.
- Sell to your circle and nearby offices, then list on local delivery and social channels.
- Track what sells and drop slow items. Add seasonal specials for festivals.
Licences and registration
In India
- FSSAI: home bakers and bakery shops both need FSSAI registration or a licence. Under FSSAI's revised limits, basic registration covers turnover up to ₹1.5 crore, with a state licence above that. Apply on the FoSCoS portal.
- GST: needed once turnover crosses the limit. The limit is ₹40 lakh in most states for selling goods, and ₹20 lakh if your business counts as a service such as a cafe. Selling packed goods to other states usually needs GST registration earlier. See GST registration.
- Shop and establishment registration and municipal trade licence for a bakery shop. A fire NOC may be needed for larger ovens or premises.
- Packaged food labels: pre packed items need FSSAI labelling, such as ingredients, allergens, date and licence number.
- Udyam registration: free and online. See Udyam registration.
In the US
- Cottage food laws: most states let you bake some non perishable items, such as cookies, breads and many cakes, at home and sell them directly to customers. Rules on allowed foods, sales limits, labels and online sales vary by state, and cream or custard fillings are often excluded.
- Retail bakery or food establishment license: needed for a shop or for selling beyond cottage food rules, from your state agriculture or health department, with inspections.
- Business entity and EIN: form an LLC with your state and get a free EIN from the IRS. Search names with the business entity search.
- Sales tax permit and local business license, plus food handler training where required.
